Chinese Fortune Cookies

 

Makes About 35

2 ea. egg whites 1/2 c. powdered sugar
1 t. vanilla or almond extract
2 T. butter, melted
1/2 c. all-purpose flour
1/3 c. coconut, lightly toasted
Tiny strips of paper with appropriate messages

Preheat oven to 375 degrees. Prepare 2-3 sheets of baking paper by cutting them to the size of the baking tray. Draw two or three circles of about 3 inch diameter, with a little distance between them on each sheet of paper. Place one of these sheets on the tray and set aside. Put the whites into a clean bowl and whisk until foamy and white. Whisk in the sugar, a little at a time. Beat in the vanilla and the butter. Stir in the flour and mix lightly until smooth. Place a teaspoon of mixture into the center of each marked circle on the prepared baking tray, and spread out evenly to fit the circle. Sprinkle with a little coconut. Bake one sheet at a time(as you will only have enough time to shape one sheetful of cookies before they set) for about 5 minutes, or until very lightly brown on the edges. Remove the cookies from the oven, immediately loosely fold in half and place on the rim of a glass. Leave until firm, then transfer to a wire rack. Continue baking one sheet of cookies at a time. Tuck the messages into the side of each cookie. Dust lightly with powdered sugar before serving.
