Caesar Salad

 

Serves 2

1 ea. Egg Yolk
1 t. Garlic(minced)
3 ea. Anchovy fillets(minced)
1 t. Dijon Mustard
1 T. Red Wine Vinegar
3 T. Olive Oil
1/2 Lemon(juice)
2 T. Parmesan Cheese
1 c. Croutons
for 2 Romaine Lettuce
to taste Black Pepper

Add yolk, garlic, anchovy, and dijon to bowl. Whip to blend. Add vinegar while whipping. Continue whipping while adding olive oil. Adjust consistency with lemon juice and set dressing aside. Prep lettuce and assemble all ingredients by tossing lettuce with dressing, croutons and cheese. Once salad is plated, top with cheese and offer cracked black pepper.
