Veggie and Cream Cheese Omelet
Great for Dinner!

 

Ingredients:

cooking spray
1 cup vegetables (pick any combo: broccoli, mushrooms, tomatoes, bell peppers, spinach, fresh herbs)
2 eggs
2 tbsp. water
sea salt and freshly ground pepper to taste
1 tbsp. lowfat cream cheese

Directions:

Lightly spray a non-stick sauté pan with cooking spray. Add vegetables and sauté until softened, about 4 minutes, depending on vegetables. Drain excess water. Meanwhile, whisk the eggs, water, salt, and pepper together in a bowl. Return pan with vegetables to the stove top and pour egg mixture over vegetables. Cook until omelet is set, about 3 minutes. Add cream cheese and fold into the omelet. Garnish with fresh herbs.
