Ingredients:
1 tablespoon extra-virgin olive oil
¼ cup thinly sliced red onion
2 teaspoons minced garlic
1 large yellow bell pepper and
1 large red bell pepper, slivered
1 tablespoon balsamic vinegar
¼ teaspoon salt
¼ teaspoon freshly ground pepper
4 small whole-wheat pita pockets
1 cup grated sharp yellow cheddar
Directions:
Preheat the broiler. Meanwhile, in a large skillet, heat olive oil over
medium-high heat until hot. Add the onion and sauté 1 to 2 minutes or until it
begins to brown. Add garlic and peppers and continue sautéing for 2 to 3
minutes, or until peppers begin to soften. Remove from heat and stir in balsamic
vinegar, salt and pepper.
Place pita pockets top side down on a large cookie sheet. (Note: If you prefer a
very crisp crust, toast the pitas lightly in a toaster oven for a few minutes
first).
Divide the vegetable mixture among pitas. Top each pita with cheddar cheese.
(Note: for a spicier flavor, you can use pepper jack cheese instead of the
cheddar. Mozzarella also works.)
Broil the pita pizzas on a cookie sheet 4 inches from heat for 1 to 2 minutes,
or until the cheese is just melted.
