For an appetizer:
Jazz up a platter of crudités with some more exotic veggies, such as daikon
radish, jicama, yellow and orange bell peppers, or fennel, and some roasted
garlic hummus (for dipping) drizzled with a touch of extra-virgin olive oil
(instead of heavy onion or ranch dip).
For a dessert:
Slice sweet and crisp Fugi apples and layer in a soufflé pan with a touch of
butter mixed with brown sugar, cinnamon. Bake at 350° for 15 minutes, then top
with a sprinkles of low-fat granola.
