Insalata Caprese

 

Caprese1.5 - 2# of fresh mozzarella cut in small pieces
2 cups of cherry tomatoes
1 cup of fresh basil, torn
½ cup of extra virgin olive oil
1/3 cup of balsamic vinegar
1T of fresh garlic, chopped
1T of sherry vinegar
1T of kosher salt
1T of black pepper
1/2T of dried oregano

In large bowl, add mozzarella and cherry tomatoes. Add olive oil, vinegars, garlic.

Mix together well. Add salt, pepper and oregano. Mix together. Refrigerate for several hours before serving. Serve with Italian bread.
