Serving: 6-8
2 fennel bulbs, sliced thin
1 Euro Cucumber, sliced thin, 1 inch by 2 inches
2 endive heads, core removed, and cut into small pieces
1 radicchio head, core removed, sliced thin
½ cup of red pepper, small dice
¼ cup of green onion, sliced thin
2T capers
Dressing:
2T of lemon juice, fresh
1/3 cup of apple cider vinegar
1T balsamic vinegar
1t yellow mustard
Pinch sugar
Salt
Pepper
Dash of hot sauce
1T of sesame oil
¼ cup of olive oil
Garnish: lavender honey or any regular honey
Cut all ingredients, combine in large bowl.
For dressing: In small bowl, combine lemon juice, apple cider vinegar, balsamic,
mustard, sugar, salt, pepper, hot sauce, sesame oil.
Drizzle olive oil and whisk together. Pour dressing over ingredients and incorporate.
Drizzle with Lavender honey or regular honey.
